At Fireweed & Ash, we believe that the most profound dining experiences emerge from a deep connection to place. Our menu is a living document, evolving with the rhythms of the region's landscape — from the first morels of spring to the wild berries of late summer, the root vegetables of autumn, and the preserved treasures of winter.
We source within a 200-kilometre radius whenever possible, building relationships with farmers, foragers, and fishermen who share our commitment to sustainability and quality. Each plate tells a story of this land, its people, and its seasons.
Our sommelier has selected seven wines to complement each course, drawing from both Old World classics and New World discoveries. The journey begins with a crisp Aligoté from Burgundy and concludes with a luscious Late Harvest Vidal from Niagara.
Each pairing is designed to enhance the flavours of the dish while standing on its own as a moment of reflection. Non-alcoholic pairings featuring house-made ferments and infusions are also available.
Born and raised in rural your region, Chef Marcus returned to your city after a decade of training in Copenhagen, Lyon, and Toronto. His cuisine is a reflection of his journey — technically precise yet deeply rooted in the flavours of home.

We offer a single seating each evening at 6:30 PM, Wednesday through Saturday. Reservations are essential and can be made up to 30 days in advance.
